fresh tomato sauce with zucchini

1 Tbsp olive oil 1 c chopped onion 2 Tbsp chopped garlic 3 c. zucchini, cut into half-moon slices (2-3 zucchini) 2 small cans chopped tomatoes 1/4 c balsamic or red wine vinegar Black pepper 1/8 to 1/4 c chopped basil (fresh or dried) 1/4 c grated Parmesan cheese

Heat olive oil. Add onions and cook until soft and slightly browned. Add garlic and cook for about 5 minutes. Add zucchini and cook for a few minutes, stirring frequently. Add tomatoes. Raise heat and add vinegar, mixing well. Bring to boil, then reduce heat and simmer until some of tomato liquid boils away (10 minutes). Add salt, pepper, basil and stir. Serve over pasta and sprinkle with cheese.
