4 c. (approx. 2 1/2 cans) chick peas 1/2 c. tahini 1/3 c. warm water 1/3 c. olive oil Juice of 1 lime (1-2 Tbsp.) Juice of 2-3 lemons (6-8 Tbsp.) 4-5 garlic cloves 1 1/2 tsp. salt Black pepper to taste
Combine chick peas, tahini, water, oil, and lime juice in food processor. Scrape down sides. Add garlic, salt, pepper, and lemon juice and blend well. Add water as needed to make a creamier consistency.
Makes 1 quart.
