Hunan chicken in ginger and tomato sauce

2 Tbsp. vegetable oil
2-3 boneless, skinless chicken breasts, cut in bite-size pieces
1 can baby corn, cut each piece in half
1 pkg. frozen snow pea pods (fresh are OK too if you can find them)
2 green onions, chopped in pea-sized pieces, including green part (optional)
2 tsp minced ginger root
2 tsp cornstarch mixed with 2 tsp water

Sauce:
2 tsp soy sauce
8 tsp sugar
4 tsp white vinegar
2 Tbsp ketchup
4 tsp pale dry sherry
1/2 tsp salt

1. Heat oil in wok. Stir fry chicken pieces until cooked. Remove
chicken from wok.
2. Re-heat oil if necessary. Add green onions and ginger. Stirfry
until they are slightly brown.
3. Add sauce mixture and stir until hot. Add cornstarch mixture and
cook until sauce is thickened.
4. Add chicken, corn and peas to sauce. Stir until pieces are well
coated with sauce and everything is hot.
