2-3 chicken breasts, cut in bite-size pieces
(and/or a can of garbanzo beans)
2 Tbsp. Instant India curry paste
1 can chopped tomatoes
5-6 Tbsp. lemon juice or yogurt (I prefer lemon juice)
Vegetable oil
Other possible additions: chopped spinach, raisins, boiled potatoes,
onions (saute first), carrots

Heat oil in pan. Saute chicken pieces until done. Turn down heat and add curry paste, tomatoes, and half of lemon juice/yogurt. Bring to a boil then lower heat and simmer 10 minutes, covered. Remove lid and simmer 5 more minutes. Stir in remaining lemon juice/yogurt. Serve over rice.
