pierogi sauerkraut filling

2 Tbsp vegetable oil 1 cup chopped onion (maybe less) 1 lb sauerkraut, rinsed & minced 1 cup chopped mushrooms (maybe less) 1/4 tsp salt 1/4 tsp ground black pepper 2 Tbsp sour cream (maybe more)

Heat oil, cook onions & mushrooms until tender but not brown. Stir in sauerkraut, salt, pepper. Cook 6-10 min. Remove from heat. Stir in 2 sour cream.
