1/2 lb medium shrimp (cooked) 1/2 onion chopped 2.5 cups broth 1 Tbsp olive oil 1 clove garlic 1/2 Tbsp butter 1/2 cup arborio rice 1/2 small tomato, chopped 1/4 cup dry white wine 1/8 cup grated parmesan

Combine oil & butter in pot. Cook onion & garlic (not brown). Add rice & stir. Add 1/2 cup broth. Cook, medium heat, stirring, until liquid absorbed. Add tomato & wine. Continue to stir & add broth until al dente (about 18 minutes). Add shrimp; 5 minutes. Stir in cheese. Serve.
