spaghetti sauce

2-3 Tbsp. olive oil
1 1/2 cups chopped onions
5 cloves garlic, minced
Canned tomatoes (e.g. 3 x 28oz crushed plus 1 x 14oz cut)
3/4 cup tomato paste
1/2 cup red wine
Chopped parsley (optional)
1 Tbsp. oregano
1 1/2 tsp. black pepper
Pinch of sugar

(All of these seasoning measurements are approximate.)

  1. Heat oil and saute onions and garlic until soft.
  2. Add all other ingredients.
  3. Bring just to a boil, then lower heat to simmer and cover pot. Simmer for 2 1/2 to 3 hours. Make sure you stir it once in a while and taste it occasionally to make sure you don't want to add more of any seasonings.
