ultimate baked potato soup
I think this can be adapted to lower fat: 1) skip the cheddar and sour cream garnish 2) use turkey bacon 3) fat free half and half and skim milk 4 large idaho potaotoes, baked 6 strips bacon 1 large onion, diced 1/3 c butter 1/3 c flour 1 c half-and-half (fat free OK) 3 c milk 1/2 c grated Asiago cheese salt and freshly ground black pepper 1 c shredded cheddar cheese 1 c sour cream Peel and cube potatoes. Set aside. Saute baco until crisp. Remove and drain on paper towels. Add onion to baconB rendering and saute till transparent. Pour onion and drippings over potatoes. In the same skillet, melt butter over medium heat. Sprinkle flour on top and stir. Gradually add half-and-half and whisk constantly till thick and smooth. Gradually whisk in milk. Add potatoe and onion mixture, bring to boil at med-high. Reduce to bare simmer, stir in Asiago and cook 10 min. Put the rest of the stuff on top as a garnish.
