cod cakes NYT

4 scallions, sliced (or onion, diced)
1 Tbsp butter
1 to 2 cups cod, cooked and flaked
3 large potatoes, mashed
parsley (dried to replace 1/2 c fresh)
1 tsp Dijon mustard
2 large eggs
black pepper
2 c plain (not panko) bread crumbs
1/2 oil

Cook & mash potatoes (eg instant pot). Cook cod in oven and flake it.

Sautee onion/scallions in butter. Mix with cod and potatoes (stand mixer works well). Add parsley, mustard, eggs, pepper.

Form patties and coat with bread crumbs. Let dry before cooking.

Fry in oil until browned, use paper towels to soak up excess oil.
