soda cracker pie

3 egg whites
1/2 tsp. cream of tartar
1 c. sugar
12 soda crackers (Saltines), finely crushed
1 c. nuts, chopped (e.g. pecans or walnuts)
1 tsp. vanilla
1/2 pt. whipping cream
1. Separate egg whites from egg yolks.
2. Beat egg whites and cream of tartar until foamy.
3. Add sugar gradually, beating after each addition.
4. Fold in crackers, nuts, and vanilla (with a spatula)
5. Pour batter into buttered 9" pie pan and bake at 375 degrees for
20-30 minutes until lightly browned.
6. Cool pie.
7. Spread whipped cream over top of pie 1/2" thick or more.
8. Refrigerate for 1 hour before serving.
